Q.Cutting, thinking summer bearing raspberries

Duluth, MN.–I have a small patch and each fall I have been removing the canes that bore fruit. Past years bushes usually got to about 5 feet tall. This year I added some recommended fertilizer along with straw and leaf mulch and with all the rain they have grown to 7-8 feet tall. Question: after removing the canes that bore fruit this year, should I top the remaining bushes and if so how much should be pruned away?
