Converting pasture to vegetable garden

Question

What is the best way to convert grass pasture to an organic vegetable garden? I need to get rid of the grass. I’m converting a pasture to a vegetable garden and need to remove/kill the pasture grass. I do not want to use chemical killers such as Roundup. What would you suggest as an efficient method? I’ve considered torching the grass with a weed burner to removing with a turf cutter. Thank you.
