Cilantro (Coriander)

Question

What do I do with my cilantro once it has bolted? I have read about harvesting the seeds, but at the moment the plant is taking over my herb garden! It’s about three foot tall and quite wide. It’s my first herb garden. Should I cut it back? From what I’ve read, it’s only the young leaves that should be harvested, so should I take it out? Thank you.
