Caring For Fig Trees

Question

We have 2 fig trees. One is a Chicago Fig, not sure of the other. Both ate located on the NE side of our house. The Chicago tree is loaded with young figs. When should they be harvested? Do the trees need pruning of unproductive branches? How shoul they be treated in winter in Allegany County MD area.
