Q.Bok Choy Is Flowering

My bok choy was planted aproximately 2-3 weeks ago, and it started sprouting stalks with flowers on them, even though the leaves are only 2-3 inches tall. What do I do. . . cut the stalk off, leave it, etc. ?

Your bok choy has bolted. To keep plants from bolting, you need to keep their soil cool. Mulch helps. Most likely the crop will not be that good, but bitter. This article will help: https://www.gardeningknowhow.com/edible/vegetables/vgen/what-is-bolting-what-it-means-when-a-plant-bolts.htm
