Does acorn squash start out white? I have squash plants coming up from seeds discarded last year and I am not sure about the ones that are white now.

There are white varieties of acorn squash available. If your squash were not white last year, it was possible that you had a hybrid variety that lost some of its hybrid characteristics when it went to seed. It will probably still be good to eat but will simply look different from its parent.
