3 yr brown turkey fig tree. Center trunk accidentally destroyed. Tree keeps spreading out. Lots of figs.

Select 4 to 6 branches to be your fruiting wood and prune off the rest. Each winter prune out any branches that aren't coming out from your fruiting wood. Here's how:
