Every day I have looked at my beans another top has been taken off. They've not been eaten just taken off, have you any idea what it could be please.

Check your plants for other signs of problems. Snails and slugs eat at night and disappear by morning.
My beets look similar I've taken off most of the leaves...very sad, me and the beets.

i have had this problem for last couple of years and i have tried finding out what is causing the problem without any success

I have a runner bean that has not sprouted this year. The root system is big and luscious (looks a lot like green ginger) papery brown and green but it has not shot this year. The other one is about a foot high. How can I encourage the root (rizome) to shoot?
They won't always regrow. It's best just to replace the ones that do not regrow. You also can try digging up the thick roots in the fall and storing them over winter.

so why has some plants pink beans and others white
This is likely from an unstable cross in the generation prior. In order to stabilize the color, it will need to be crossed with another of the color that you would like it to be. This will need to be continued until all progeny are the same color.
