Winterizing Elephant Ears

I have had the same elephant ears in the ground for 4 years. I did not bring them in nor cover with anything but leaves.

Yes. There are several cultivars that are meant for zone 7 and up, with some tolerating down to zone 6. It would be safe to assume that this is what you have.
