Winter planting Ginger

About 6 weeks ago, I planted indoors organic ginger. It is almost 2″ tall now and it seems to be growing very fat. I am in zone 10 and I wanted to know if winter harvesting is a good idea. When the ginger reaches 4′, can it be harvested even though it is winter? This is my first time with this plant and I don’t want to hurt it.

Baby Ginger can be harvested 4 to 6 months after planting. Mature Ginger is harvested just after the winter die back of the plants. In your zone 10, the leaves will began to show signs of age by yellowing and withering.
