when to pick my new mexico chili pepper

It is turning red from a dark green. Should I allow it to turn completely or harvest it now? It’s about 1/2 red and 1/2 green.

It is really a personal choice. All peppers can be harvested green or their mature color. Green peppers generally will have less bite, and mature (in your case red) peppers will be fuller in flavor and generally sweeter. If you are looking for the true mature red flavor of this pepper, wait until it is mostly red before harvesting.
