what to do after orchids finish flowering

Please see attached photo. My orchids have almost finished flowering but have already produced another stem with another on the way. Do I cut off old stem at bottom which looks to have happened before?

Stunning Orchid!

Here are a few links for you.
I would allow that new stem to grow a little larger before dividing it from the plant (if your wanting too)
You can dab a little cinnamon on the cut when you prune the spent flower stem. This acts as a fungicide.
Always use clean sterile tools on your orchid.
