Sweet Red Bell Peppers

What does it mean when a mature pepper is green and begins turning black? Does it turn black before red? Should I pick it?

No, a mature green pepper should turn red. Do pick it and cut out the black area, that indicates it’s been damaged, probably from an insect pest. The rest is still edible.
