Orchid Plant What Kind And What Are These

Good morning I have an orchid plant indoors and I’ve forgotten the name and wanted to know what to do with the shoots appearing on the plant

It appears to be a Vanda Orchid. Those white protrusions are aerial roots, and are a normal part of this plants growth habit.
