Moving, can I store plants?

We are moving from Missouri to Virginia. I have hostas and elephant ears (lots). Can I dig them up and store them till spring and can you tell me how, please? I hate to leave behind 5 years of work. We are moving in 2 weeks and we’ll be in a place for a month I won’t be able to plant anything. Thank you so much, it would really help me to get your advice. Debbie
