is it too late or just not as effective to spray once flowers start

if not, is one particular spray the best for late spray

It is always best to spray before the fruit forms, as to cure the disease before it affects your fruit. I am including a link that will help. Most fruit trees can be sprayed roughly the same way. https://www.gardeningknowhow.com/edible/fruits/peach/peach-leaf-curl.htm [1]
