Keeping Tomatoes Green

I have a large tomato, two and a half pounds. I want to put it in a county fair. I just cut it off the vine today; it’s still green but looked like it was about to start to ripen. The fair is on Labor Day. Any ideas on how keep the tomato in good shape till then? I have it wrapped in newspaper and put in the fridge.
