Is large zucchini which is yellow inside safe to eat

I picked zucchini which are one foot and larger. They are yellow and tough on the inside. Are they still good to bake with?

These look fine. They've over-grown and may be tougher than others, but if you remove the seeds and just use the flesh, they should be quite edible.
