Is It Better To Leave Ginger Alone To Grow A 2nd Year Before Harvesting Or Dig Up And Separate The Rhizome To Replant More Places?

I have several 9 month ginger plants that I started from grocery store ginger. I am in US zone 9a. I dug up a plant today to see how much rhizome was there. Don’t know how to proceed? Can I let it stay in the ground and just dig up plants as I want to use fresh ginger?

I would let it grow for several years before harvesting. You can harvest earlier, but the longer you wait, the bigger the ginger root mass!

Typically, it is safe to harvest after a year, though. This will give you enough to use and enough to plant.
