transplanted several mature lemon grass plants

I transplanted several mature lemon grass plants. They are now turning brown. Can I cut them off at ground level and will they survive? They appear to be dying.

They are likely suffering from transplant shock. You can cut them back some (I would leave at least a couple inches or more) and ensure they have plenty of water.
