Horseradish Problem

I have been growing horseradish in my garden for many years. Of late they have developed a bitter taste so much so that it is not edible.
Could you perhaps help me?

The bitter zing of horseradish comes from a chemical called allyl isothiocyanate, which is produced when the chemicals sinigrin and myrosin combine in water. Horseradish has sinigrin and horseradish has myrosin, but it doesn’t keep them in the same place so the heat and bitterness does not exist until you chop the root up.
