garlic

I found a patch of wild garlic that has been untouched for several years. Today, I decided to dig them up. I have read that you should stop watering them about 3 weeks before harvest. We have been in a drought for almost a month. The stems were completely brown, there were almost no leaves and the cloves were separated. All signs that I am late.
But I have questions. Do I have to leave the stems on while drying? How long should I dry them? I have also read that they will not store for long, but do you have an idea for how long? Or did I waste my time?
Please send my an answer as soon as possible so I know what to do.
