How do I begin the process of drying out 2 indoor hyacinth bulbs that were grown in water?

You can keep them in their pots if you want to force bloom again next spring. If they were only in water, you can pot them up, then care for them as this aricle states. If you want to just keep the bulbs without soil, I have included an article for that, too.
