do zucchinis secrete a sticky substance

When I slice my zucchini, sometimes the end cut piece sticks to the cutting surface. Why is this the case?

It’s just the moisture in the vegetable. You can lay the sliced zucchini on paper towels to draw out the moisture. I do this when I’m cooking them.
