Cosmos pinching out

I pinched out my Cosmos plants when they had 3 sets of leaves on.

They are now 3ft tall. Can I still pinch them out? Some are starting to flower. They’ve been transplanted at least 3 weeks ago.

Since some are starting to bloom, why not wait to pinch off the bloom and go a little lower. This will force more growth at the bottom of the stem and a sturdier flower. See more:
