Clones or splittings?

In my 9th grade geo science class, there was a presentation and tutorial on how to cross one fruit tree to another with what I’m thinking was trimmings. Is this called splinting or clones? Is it possible to make a super pepper by crossing a pepper with another vegetable bush or fruit tree? Also, I live in west Texas so I was curious of the outcome of crossing a pepper bush or anything at all with a mesquite tree.
