what do I do with my Nemacias in the fall when they stop blooming?

I will assume that you are referencing Nemesia. There is an annual, and a tender perennial, depending on which you have. In all but the warmest climates, the perennial will act like an annual, so it is best to assume that anything you plant will act like an annual.

You can remove the plant when it dies off for the year.
