Three things that might make squash skin tough are, water, temperature and maturity. Too little water and too high a temperature will cause the skin of any fruit or vegetable to be tough. Squash is the world’s worst about getting too old/large and having tough skin. And, sometimes, the variety can have a tougher skin than others.
