I am cutting up my zucchinis that were given to me and I was wondering if I can use the seeds inside the zucchinis to plant and make more zucchinis?

Theoretically you can. However, the seeds that you buy to grow into zucchini plants are hybrids, produced for the commercial market. As hybrids, they can't be depended upon to be disease resistant, or to have any of the characteristics that you want in your zucchini, or even to be fertile.
