Yellow Squash

Why are some of my yellow squash hard, dark yellow/gold color with greenish colored pulp and large seeds inside, and some are normal, all from the same plant?

It all has to do with how long a squash has been left on the vine. The squash on your vines will not all be at the same level of maturity. If you wait too long to harvest squash after it’s ready you will be confronted with squash that is hard, dark yellow with large seeds inside.
