To freeze Pink Eye Purple Hull Peas, first, shell them and then blanch them to keep them fresh. Bring a pot of water to a boil, add the peas, and blanch them for 2 minutes. Quickly move them to a bowl of ice water to cool, then drain and dry them. Spread the peas in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to airtight freezer bags or containers, removing as much air as possible. Label the bags with the date, and you can store the peas in the freezer for about a year.
