Gardening Know How Questions & Answers - https://questions.gardeningknowhow.comI had a garden club member grow some Georgia candy roaster squash for me. In July she brought me five squash and said that the vines were dying. I usually let the vines die in the fall then pick the winter squash then. Do you think the squash seeds will continue to ripen if the squash was picked in July?

If is not likely the seeds will continue to mature.
You certainly can harvest and dry the seeds, but the germination rate would likely be poor.
