It is just the water in the plant coming out. Plants have a vascular system like animals do. Instead of blood, their system flows with nutrient and sugar rich water. When you pick the fruit, you are wounding the plant, so in a well watered plant, you can expect some “bleeding” or weeping from both the wound on the plant and the wound on the fruit.
