Why Are My Limes Yellow?

I have a dwarf lime tree planted in the ground. It is very healthy and produces a nice crop of limes. While the juice is lime, the fruit turns yellow instead of that green shade I see at the produce market. How do I get my limes to stay green?

They don’t stay green. Limes are actually yellow when fully ripe. They should be harvested and enjoyed while unripe. Here is more information:
