I found this website of volunteers that promote the peach industry in Michigan. It says the white peach varieties grown in Michigan are White Lady, Blushingstar, Carolina Belle, and China Pearl. I looked at some recipes for bellinis but peach varieties weren't named. You might contact someone at the Michigan peach website or the Michigan State University Extension for a recommendation.
