White bird of paradise

We have 2 plants that have grown to over 12 feet high. We trimmed them, but now the middle parts are all stalk and there are a lot of dead flowers and huge leaves above that. Can we cut off the plant in the middle where there is just stalk and will it live if we do that?

Yes, you can prune out any dead plant material.
