When do I prune fig, olive, apricot and pomegranate trees in Southern Arizona?

I just moved to Southern Arizona and have apricot, fig, olive and pomegranate trees that the previous owner got good yields from. When is the best time to prune these? It is February now, but I assume the dormancy period is different here. Also, how often should I water?
