Water them well with some water that has a product called Super Thrive in it the day before digging them up to move. Get as much root system as you can, place them in large pots or buckets. Water lightly with the super thrive and water mix. Once you plant them in Utah, water them in with a water mix of super thrive AND a root stimulator product, such as Fertilome Root Stimulator. Water them with this same dual product water mix the next 5 to 6 times they need water. Keep in mind that rose trees are created by man. The grafted on rosebush on top is not the same as the "trunk" part. In cold climates, pretty much all rose trees are planted as annuals. This is due to the upper part dieing due to freeze exposure. Some are able to survive with some rigorous protection efforts but loss of them happens a lot.
