what to plant in a 16 foot diameter fountain

Question

I have decided to plant what was a fountain (now filled with good quality topsoil) but not sure what with.

I like the idea of a centre feature of a japanese maple but what should I plant around that?

Any ideas would be much appreciated. I do not want to have to spend a great deal of time weeding etc so would like ease of maintenance also.
