What fig variety will grow well and survive in Central Oklahoma?

There are a number of fig varieties that will do well in your region. The Celestial is one that thrives well in your area and is less prone to souring. Brown Turkey varieties also do well under your climate conditions. Peter's Honey fig is suitable for locations with early frost but needs a warm location for proper ripening and may require additional winter protection, though it does seem to fit the bill as far as what you are looking for.
