Our 1st year Apple tree has small apples on it but the leaves are turning yellow. We are afraid that it is dying. If we trim the limbs back will that help it?What can we do to help it?

Unless you have an apple that is well suited for the South, it may be too hot for the tree. I've included a link that explains how and when to prune.
