Q.Watermelon Fruit Development

At fruit development stage of watermelon, due to severe infestation of leaf miners, most of the leaves have been lost (now under control) and vines are good. What should I do to develop fruit at full size and maturity?

Honestly, it will be difficult for the plant to regrow leaves and produce decent fruit. You may want to consider removing the fruit to allow the plant to dedicate energy to the leaves and then it can support decent fruit production.
