The leaves of my yucca plant are turning white. Am I watering too much or not enough?

It is likely too little water. As long as they are not in standing water (i.e.. the ground is swampy) then you are not over watering them. Increase water to the plants. You may want to water for longer periods of time rather than more frequently as this will allow the water to reach deeper into the soil and reach more roots.
