How often do I need to water my potatoes? Shallots?

Most vegetable plants require at least 2 inches of water weekly during their growing season. To ensure they are get enough, use drip irrigation or soaker hoses. For the maximum crop, keep your potato vines well watered throughout the summer, but especially during the period when they are in flower, and immediately thereafter. Keep soil moist but not soggy. Shallots will need to be kept moist early on but will require less as they begin to mature…too much water can rot the bulbs. For both, water early in the day so that the foliage has time to dry completely before evening. When foliage turns yellow and dies back, discontinue watering altogether.
