Using Space in a Square Foot Garden

I have built a square foot garden and am now planning what will go in each spot. I have read that you can double up spots – when one plant is harvested, you can then replace it with something different. What I am wondering is, how do I know when it’s time to pull a plant out of the ground, if ever? I live near Boston, Ma, which is zone 5 or 6, and hope to do both spring/fall veggies and summer veggies.
