Are you asking about acidifying the soil with coffee grounds? There is a wide range of acidity in coffee; most of the acid comes out in the brewing process. The grounds have minimal effect on soil acidity and, like all organic matter, is best composted before putting in the garden. I have heard of people who live in areas with very alkaline water trying to correct pH by putting unused brewed coffee in the watering can.
