Q.Transplanting Mature Roses Now (California) Do I Need To Prune Drastically Prior To Moving?

these have grown very tall, wondering if I should just remove the excess of the top and then do a final pruning once they are moved?

That sounds like a good idea. This article on transplanting roses says to prune after moving, but since yours are tall, it will be easier to handle them if they are a little shorter.
