I have grey/brown irregular shaped areas on the leaves of my swiss chard. I thought it might be sun damage from watering in the hot part of the day. It's getting worse. No sign of snails or insects. Fungal? I bought the starts all from the same place.
If you have changed watering, (water at soil level and avoid hitting the leaves) and the issue is persisting and spreading, it is likely a fungus or pest issue.
Make sure the soil is moist but not soggy, and draining well.
Make sure the plant has air circulation around it.
Remove leaves that are affected and discard.

What are spots on swiss chard?
I will need a photo, as this could be many different things depending on the size, color, shape, and how fast they spread.
Any idea what is causing leaves to discolor and how I can save my chard and beets? They were growing great until now. Live in PA. Temps have been pretty high. Been getting a lot of rain too.
Yes, this is the most common issue that I am dealing with at this time of year. It is definitely rain related. This is a fungal issue caused by staying wet for too long. You can counter this using dolomitic lime and wettable sulfur.

We had a fantastic crop in our wicking beds and there is now some new growth coming up from underneath the old leaves - but is it better to dig it up and start afresh?
It is usable but it can become quite bitter and tough if left to bolt. It is recommended to start fresh each crop season. This article will give you more information on the care of these: https://www.gardeningknowhow.com/edible/vegetables/swiss-chard/how-to-grow-swiss-chard.htm
Tha plants are struggling to grow as leaves are eaten
It could be any number of insect pests. Unfortunately, it is hard to say which without catching it in the act.
I would treat with a broad spectrum insecticide.

Something (pigeons?) was nibbling on my young chard, kale and romanesco crops so I put up netting with fairly large holes (ie keeps birds out but not insects) and that has solved the problem. Now the plants are mature can I remove it? Do the birds just like young leaves? It’s a hassle to get in and harvest the chard and kale each night and also to weed so I’d like to take it off but am worried there will be nothing left by morning!!
They may start picking again, but there is always the option of removing the netting to harvest and replacing it after.
Alternatively there are other ways to control birds, as well. These articles will help:
