Stephanotis will drop buds when stressed.
Ideal temperatures should be between 70 and 80 degrees F.
Overwatering and underwatering container-grown plants can cause sudden bud drop. Ensure the container you are using has drainage holes in the bottom, or excess water will puddle around the roots. When watering, soak the soil thoroughly until water starts to seep out the bottom. Allow the top 1/2 to 1 inch of soil to dry out before watering again. Lack of humidity will also cause bud drop. To increase humidity, place a saucer filled with pebbles under the container, and fill the saucer half full with water. As the water evaporates, it will increase the humidity around the plant. Another option is to keep it in a humid bathroom.

It would be best to prune this LIGHTLY in late winter or early spring. Just be frugal with it. These plants tend to be pretty sensitive. If you can get it to seed like that then you are doing something right. Here is an article that will give you more useful information: https://www.gardeningknowhow.com/ornamental/vines/stephanotis/stephanotis-plant-care.htm

Stephanotis blooms on new growth- the new shoots it puts out will have the most flowers- so pruning them back will reduce flowering temporarily. However, you can prune to reshape the plant, and then wait for it to regrow and flower again. This article has a guide to pruning this plant:

If you have flowers at all, given that you have to bring it in in the winter, then it is doing quite well! These are VERY picky about their microclimates. Much change at all will cause them shock. The trick to keeping them flowering will be to keep their environment as stable as possible without change. It is also good to fertilize it every now and then. This article will give you more information on these: https://www.gardeningknowhow.com/ornamental/vines/stephanotis/stephanotis-plant-care.htm

Most likely, there is too much nitrogen in the soil. This can happen with, either, feeding it with a high nitrogen fertilizer too close to flowering, or having slow release nitrogen in the soil.

You can offset this by adding phosphorus and potassium to the soil, usually.

Alternatively, it could be a set of environmental factors. This article will help you: https://www.gardeningknowhow.com/ornamental/vines/stephanotis/stephanotis-plant-care.htm
