I have Sorrel seedlings now (September). Can I grow on in pots then plant out in the spring. I do not have a heated greenhouse just normal one. I live in East Anglia, which is mild in winter usually.

I would recommend planting 2-4 seeds per pot and after they sprout, thinning them to 1-2 plants per pot.

Is there any reason I can't use the wood sorrel (five-petal yellow flowers) as a ground cover in my garden? If I simply leave it alone in the garden, will I regret it?
I think you might regret it. Oxalis corniculata L. is not a plant you can simply leave alone in the garden because it is very invasive and difficult to remove once it takes hold.
